Air-Fried Chicken Stuffed Tortillas with Peppers and Corn Meat 2 cups Chicken, cooked Produce 1 cup Corn, fresh or frozen kernels 1 Jalapeno pepper 3 Scallions Condiments 1 Salsa Baking & Spices 1 tsp Chili powder 1/2 cup Peppers, roasted 1 Salt and freshly ground black pepper Oils & Vinegars 1/4 cup Canola or olive oil Bread & Baked Goods 12 8-inch flour tortillas Dairy 2 1/2 cups Cheddar cheese, grated 4 oz Cream cheese

 This barn is where I spend most of my free time. This is where my horse lives, and I board with such an amazing group of ladies. We have so much fun! In this new year I am going to complete Warhorse Endurance Conditioning Challenges, so Durby and I can earn some medals by putting in some miles. It will be something fun to do with my horse. I am also to take fitness more serious, and get into better shape. Those are my two goals for this year.   
 I seem to be dragging my feet for Christmas this year. I did put up my tree. I got a new one after Christmas last year, and I really like it. Double the size of my other one. I haven't started shopping yet, which I should really do. I don't have many to buy for, so it should be easy to do I did make a list. I was hoping it would snow. Not looking too promising. My present to myself is new tires and wheels for the Tacoma. She is going to look so good! I can't wait for that!  
 I do side projects through Appen, and I will post a link to their site below. I have been doing projects through them for about four years. They have paid on time, and never have had any issues with them paying me. Their projects vary some are long term, and some are short ones. Happy Thanksgiving! Enjoy your day, and keep your loved ones close. It is definitely a different year Mama died in February, and my niece died in July plus COVID, yet I am thankful for everything I DO have, and my family and friends. A big shout out to my brother-in-law Greg who loved his Turkey. Wherever you are enjoy your Turkey with your daughter Trisha, and Mama I am sure she is making her rolls. Enjoy every bit of your life, it changes in an instant. I love my family and friends so much, a BIG thank you for everything you do! My daughter what can I say...so, so proud of the woman you have become, what a BLESSING you are! Your students are so LUCKY to have a teacher like you!!And to my animals..Durby, Jake, and Cat thank you for getting me through one of the worst years of my life!

This photo cracked me up!  This is my daughter's cat, she likes to dress her in costumes and hats. She doesn't look as annoyed as she usually does. Haha! Bring on the holidays!!

I got lucky twice with my two horses. The first time I had my girl for 27 years. This boy right here sure is just as special in different ways. He is always happy to see me, and takes care of me when we ride.
